How many artists did the series have, and what are they up to now?

Let's see...
There's Edage Katsura, who did designs for Viper CTR and RSR. Not sure what he's doing these days though.
Takahiro Kimura did the designs for Viper V16, GTB, and F40. He went on to produce several more anime like Godannar and teamed up CLAMP on the more recent Code Geass.
While not responsible for visuals, Power Warrior did the story for Viper GTS and probably for a number of other Viper games.
I believe Makoto Uno did the extra artwork for a few Viper games, namely illustrations for Viper Islands. They became the animation director for the Witchblade anime.
That's all I can think up at the moment.

Edage Katsura is a psuedonym. His real name is Ken'ichirou Katsura (http://ja.wikipedia.org/wiki/%E6%A1%82%E6%86%B2%E4%B8%80%E9%83%8E). He's been involved with alot of stuff over the years, notably De Capo, .hack, and ToHeart 2. Like alot of Sogna artists, he came from working on Ranma 1/2 earlier. He also worked on M1's My Mothers story but Wiki isn't sure he was the original designer.

He's credited at Awaji Sugawara in the VIPER series.
I know the two character designers (V3 (http://ja.wikipedia.org/wiki/%E4%B8%AD%E5%B6%8B%E6%95%A6%E5%AD%90), X (http://ja.wikipedia.org/wiki/%E7%9F%B3%E7%94%B0%E6%95%A6%E5%AD%90_(%E6%BC%AB%E7%94%BB%E5%AE%B6))) for Animahjong also came from working on Ranma 1/2, and went on to work for several more animes of that ilk.
I've not really done much searching for other character designers.
The older VIPER games didn't have credits either in game or in instructions booklets, so its hard to tell exactly who the artist(s) may have been. I estimate the series as a whole had about 10-12 character designers total, and about 10-12 more animator-artists.

Guess this finally explains the striking resemblance between the character design in M1 and Ranma. Fascinating!

That's P-Warrior's page. His real name is Kenichirou Nakamura (http://ja.wikipedia.org/wiki/%E4%B8%AD%E6%9D%91%E8%AC%99%E4%B8%80%E9%83%8E) by the way. The Sogna/Silence Wiki (http://ja.wikipedia.org/wiki/%E3%82%B5%E3%82%A4%E3%83%AC%E3%83%B3%E3%82%B9_(%E3%82%B2%E3%83%BC%E3%83%A0%E4%BC%9A%E7%A4%BE)) tells all. As it turns out, he wasnt just the writer but a fair artist (also from the Ranma crowd) and President of Sogna for its entire lifetime.
